No-shows: diners aren't showing up for bookings

People who own and run restaurants say that behaviour has changed when it comes to bookings. They claim that more customers these days seem to think it’s acceptable to book a table, even confirm the booking nearer the date, but then fail to show. It’s damaging profits, particularly for destination restaurants that have no passing trade. Bob Walker reports on the scale of the no-show problem, and what some chefs and restaurant-owners are doing about it.
